Wood-fired tastes incredible but takes 45 minutes to heat. Gas hits 700°F in 15. Here's how to pick.

Outdoor Pizza Ovens — Wood, Gas, or Hybrid?

Wood-fired

Best flavor, ritualistic to use, looks magnificent. Needs 45 min preheat, dry hardwood ($$$ in AZ), and chimney clearance from structures. Brands: Forno Bravo, Mugnaini.

Gas

Push a button, 15 minutes to 700°F, no smoke management. Brands: Alfa, Ooni Karu (countertop), Lynx built-in. Pizza is excellent — not quite as smoky.

Hybrid (gas + wood)

Gas to heat, wood for the last 5 minutes for flavor. Best of both. Costs about 30% more than gas-only.

Install considerations

  • Built-in vs. countertop changes price by 5×.
  • Always pad-mount on non-combustible base.
  • 3 ft clearance to any structure for wood ovens.
  • Run gas line at install time, even if you start with wood.
