Layout fundamentals

  • Work triangle: grill, prep, fridge — keep within 6 ft of each other.
  • Counter overhang: 12" minimum for stool seating; 15" for comfortable knee room.
  • Wind: orient the grill so prevailing wind blows smoke AWAY from seating.
  • Shade: integrate the kitchen with a pergola or solid roof — Arizona sun degrades stainless and stone seals.

Grill & appliance brands

Gas, electrical, and ventilation

  • Natural gas is preferred where available — no tanks to swap.
  • BTU sizing: ≥ 1" gas line for ≥ 80,000 BTU appliances.
  • Electrical: minimum 1 dedicated 20A GFCI circuit + USB receptacles.
  • Ventilation: 1.5x burner BTU rating for hoods under solid roofs; passive venting OK under open pergolas.

Counter & cabinet material

Granite and quartzite remain the most durable outdoor counters in Arizona. Avoid engineered quartz outdoors (resin yellows in UV). For cabinet boxes, 304 stainless or marine-grade polymer outperforms framed-and-veneered masonry over a decade.

Frequently asked questions

Natural gas or propane?
Natural gas whenever the line is available — no tanks, no refills, lower per-BTU cost. Propane is the right choice on rural lots and casitas without service.
Can I move my indoor grill outside?
Indoor freestanding grills are not rated for permanent built-in enclosures. Drop-in units (Hestan, Lynx, DCS, Alfresco, Bull, Blaze) have the flange clearance and ignition systems for safe install.
Granite or engineered quartz on outdoor counters?
Granite or quartzite. Engineered quartz uses resin binders that yellow and degrade in Arizona UV within 3–5 years.
